Crushing & De-Stemming Step 2
01 Crush 02 Crush
Shortly after the trip to the vineyard we setup for the next step. With the white grapes they need to be crushed and de stemmed immediately, as most all white wines don't ferment on the skins. So by crushing and desteming we prepare the grapes for what's ahead.
Crusher/DeStemmer's do a nice job of the separation of the grapes from the stems which we will discard. If one had to do this step by hand it take all afternoon and then some depending on the amount of grape to process.

Shown above is a good view of the machine used to make the vintners life a bit easier. The basket is easily removable for cleaning, and the manual crusher/destemmer can be turned on it's side to hose down and get a sanitize rinse. We simply use some Metabisulfite.

Shown above we get a close up view of the broken grapes ready to be made into "MUST", and yes an occasional stem or two will slip through the basket. All in all we are ready for the next step.
