1 Lug of Pinot Noir

Please read our notes on this years winemaking ritual. As progress continues we track the making of Pinot Noir from fresh California grapes. The process stats right out of the wooden crates used to hold the grapes then advances to the crushing/desteming, and onto the primary fermentation, during which time the must is punched down 3 to 4 times a day, until dryness is reached. This tutorial will give new crafter's an insight to behind the scenes of the winemaking process.

This is a very special an unique grape which thrives along the east coast, particularly in Pennsylvania. Chambourcin ripens late but when it is ripe it will make an excellent red wine. It was a hybrid developed by Joannes Seibel in the Loire Valley of France, based on a number of undetermined Native American species and Seibel hybrids. Released in the early 1960s, plantings increased steadily in the cool coastal Nantes region of the western Loire Valley in France. Chambourcin wines deliver expressive aromas, mixed with structure, this is a result of their thick skins, high tannins and good acidity. Ride along while we make this wonderfully delicious wine.

Vidal Grapes Vidal go
This is a white wine grape grown primarily in the northeastern US and Canada. Vidal is a French hybrid, in other words it was "made" by combining two different grape parents. In this case "VIDAL" the varietal was created from the parents ugni blanc and seibel. Note that ugni blanc is also known as trebbiano, and is a white grape used in Chianti blending. The vidal grapes seen at the left were picked at Paradocx vineyards in Landenberg PA where they are used to create a delicious late harvest wine not only for blending but as a stand alone variety as well. In general, Vidal blanc is not normally grown to create a straight table wine. Instead, it is used to produce some quite tasty late-harvest sweet wines. Vidal can even be used to create ice wines because it is able to survive in colder weather. When it's used to make ice wines, vidal often has an apricot and tangerine flavor.
